Gastronomy is a very strong point of Aigialos.

We met him Theodore Alexis, a young creative chef who in collaboration with Konstantina Faklari has created a very interesting menu. It is worth noting that breakfast, lunch and dinner can be served either in the courtyard of the main reception building or in each of the 16 apartments.

Thodoris started his career in Santorini, working in hotel restaurants, for 10 years.

Five dishes we tried were inspired by greek traditional cuisine with local materials but had strong creative concerns:

The salad was from santorini cherry tomatoes, combined with fresh herbs, Thessaloniki bun and drizzled with a creamy sour cream dressing.

A very original appetizer - and not a sweet one - was the katafi with sweet mizithra ou, with pieces of handmade pastries (tomato and caper) and fresh basil leaves.

The interesting salad trilogy included a smoked eggplant salad from Santorini eggplants, local fava beans and a delicious beetroot garlic with orange kofi matured for 6 months.

The classic moussaka was presented as eggplant puree with braised lamb and the creamy béchamel that we all know!

Finally, the rice pudding with cinnamon ice cream, inspired by Theodore's mother, Sofia, was really an impressive surprise.
