Mykonos Rafiolia

Rafiolia are a common confection in the Cyclades. The Mykonos variation was perfected by the talented local chef Eirini Zouganeli, who kindly provided us with the recipe for the TV presentation of the Greek Breakfast of Mykonos, when rafiolia were chosen as one of the island’s most representative sweets.

Recipe for Mykonos Rafiolia

Ingredients for the dough

  • 800 g. flour
  • As much water as needed for a soft dough
  • Grated zest of 1 orange
  • Juice from half an orange
  • 2 tablespoons vinegar
  • 1 small glass olive oil
  • 1 pinch of salt
  • 1 pinch of sugar

Ingredients for the filling

  • 500 gr tyrovolia cheese
  • Grated zest of 1 orange
  • 2 eggs
  • 1 tbsp cinnamon
  • 1 vanilla
  • ½ cup sugar
  • ½ cup honey

Additional ingredients

  • Oil for frying
  • Cinnamon
  • Sugar
  • Honey

Instructions

Mix all the ingredients for the dough until a soft and springy dough forms.

Mix all the ingredients for the filling.

Flatten the dough with a rolling pin into a thin sheet. Use a glass or a cup to cut out circles 10 centimetres in diameter, repeating until all the dough is used. In the centre of the circles place a small spoonful of the filling and close firmly by folding one edge over the other.Press them shut with your fingers or a fork, and repeat until all the circles have been filled.

Fry the rafiolia in hot oil until lightly browned.

Drain and sprinkle with sugar, cinnamon and honey.
