Manoura of Sifnos

One of the most special cheeses of Greece (in this category belongs the wine cheese of Kos - cheese of drinking) is Manoura of Sifnos which matures in wine lees and with it mastelo (lamb cooked in a clay pot) and chickpeas are the gastronomic ambassadors of the island.

Fresh maneuver - usually eaten with honey and is the key ingredient of Sifnos gingerbread -, enters wine lees (gyli) and then in a jar for maturation. In the jar, the aromas of the wine lees penetrate the mass of the cheese, thus creating a wine cheese, with a sharp and spicy taste, a special aroma and a characteristic black skin that is eaten.

This very special cheese is consumed on time dessert together with dried fruits and is ideally accompanied by aged, fortified wines, such as bison or porto or some aged spirits. Each maneuver head does not have a size over 500-700gr.
