Η Samples of Mykonos  is the typical meze of the island because it is created by two products that are typical gastronomic ambassadors of Mykonos, from thug  and nuts.

And the men thug, until a few years ago it was known only by the locals and was honored by few - those who were looking for hidden gastronomic treasures - it was recently standardized and produced with modern certified procedures in Mykonos Cheese Factory, thus getting the passport to travel to the demanding markets of Athens, but the nuts still retain their humility. Humility that is not justified because they are these, "the double-baked breads" that for centuries fed not only the inhabitants of the island, but also the fleets that traveled to the Aegean Sea that in Mykonos found the best supplier of the cake. Using this, the people of Mykonos used the two unique goods that they had in abundance, the air and the phrygana, to turn the wheat into flour with the windmills and the flour into refined bread (rusks) in the wood-fired ovens of the island.

Η  preparation of the sample It is simple because it requires minimal time and ingredients only a large nut -preferably barley-, a tablespoon of chopped, a large boiled tomato and a tablespoon of olive oil, optionally oregano, capers and olives.

In the execution of the recipe all we have to pay attention to is the correct wetting of the nut. Because if it gets wet less it will be hard to chew, while if it gets wet it will soften a lot and will lose its necessary roughness and crispness. After the nut is drained, spread it with the chopper. Then cut the tomato - into slices or small cubes - and put it on top of the chopper and pour the olive oil, oregano and capers on top.

The result is the spicy taste of the kopanisti - the older the kopanisti, the more intense the pepper will be - to be balanced by the sweetness of the tomato and to create an exciting combination.
