Orange salad
In Italian orange means orange and so when Corfu talk about Orange salad they mean the orange salad.
A delicacy that apparently was very common in Corfu, in fact, her recipe is written in the excellent book of Ninetta Laskari "Corfu, a look through time, 1204-1864" in Corfiot dialect:
"We cut round oranges into oranges-pasteurized-in the threshing floor so that the dough is not crushed. Add oil and put in a medium-sized jar - a lot of red pepper and so much salt ".
That is, more understandably, slices of orange with oil, coarse salt and red pepper… It is a simple. fresh and aromatic salad, on the one hand hot and on the other very sweet. Go and dip the bread in the oil… the paradise!
Unfortunately, due to its simplicity, it is rarely found in Corfu, except Ognistras in Palia Perithia where I first tasted it!
