But as you approach the center, some human voices in the wilderness, something the smells of food, some chimney smoke prepare you properly. And indeed you reach the center, where in the three or four buildings of the central square - do not imagine any large clothesline - with their tangled corridors are housed Taverns, which summers are usually full. I visited them in the fall. It was drizzling and from all the taverns that were half empty I chose it Tavern of Foros.

My love for the old places and the old cooks is well known.

The wear and tear of the material, the patina of time, the self-made patents, the feeling of it, the unpretentious behavior, the warm atmosphere, the home-cooked food and the restless conversations with the tavern owner are a strong antidote to the current experiences of urban centers and gastronomic exaggerations. THE Tax met my specifications to the fullest.

The foods are familiar Corfiot recipes, pastitsada, sofrito, chicken with potatoes, Corfiot sausages, onion pie, all in very filling portions. To say goodbye to Tavern of Foros there is the walnut pie made from a flood of spices and syruped with Corfiot honey.
