Of all the cheese pies of the Aegean islands, the cheese pie of Patmos is one of the most delicious and undoubtedly the most exuberant. In the shape of a tart (open pie) or oversized cheesecake has dimensions of at least 10 points in diameter and 4 points in thickness and contains mixed types of cheese.

Η dough It is made with flour, butter, olive oil, brown sugar, milk, yeast, flower water, salt, pepper and a little cinnamon, while the filling contains equal doses of feta, patina mizithra and fresh patina cheese with many local eggs (corresponds to about one and a half eggs in each cheesecake).

For the sheet

  • 1. Mr. flour for all uses
  • 150 gr. butter
  • Or a glass of olive oil
  • 1 cup of brown sugar
  • 300 gr. lukewarm milk
  • 1 sachet of dry yeast
  • 1 tbsp. local flower water
  • A little cinnamon

For stuffing

  • 800 gr. skate mizithra
  • 800 gr. skate fresh cheese
  • 16 local eggs

Knead the dough ingredients, let it rest for a while and then open a half-point thick sheet that we place in special round molds.

Then we prepare the baton which is the filling with the cheeses, the eggs, the flower water and the cinnamon. Bake at about 200 degrees and lasts about 1 hour.
