Xerotigana is the traditional sweet of Amorgos - common in other Cycladic Islands - made for Christmas and Easter treats, but is also offered at weddings and christenings along with the traditional pastel and celebrations.

Wanting to share this special taste with everyone around Amorgos, every summer, the Xerotigan Festival is organized. There, guests can watch the process of its preparation, try it accompanied by baked raki, but also have fun and dance with the local dance groups with the background of traditional local instruments.

For the dough we use flour, olive oil and salt, for the syrup sugar, water, honey and lemon juice, while for frying we use olive oil or seed oil and for sprinkling sesame and roasted almonds.
