Η watermelons is a Cycladic pie that is more common in Wax, The Milo, The Folegandros, and less in Virus, but here I had the opportunity to see its preparation by her hands Despina Denaxa, owner of the famous Liostasi Hotel.
And I learned from her many secrets about watermelon, watermelon pie or aniagourenia, as it is called in Folegandros.
Because how easy it is to build with ingredients: Its: watermelon, flour, oil, sugar, honey, cinnamon, sesame and auxiliary Corinthian raisins, it is so difficult to achieve the right taste.
How many and how many times did I not stumble upon watermelons that looked like baked sweet porridge - sweet flour pie - without character and of course nothing to refer to the watermelon.
The secrets of the fruit pie are the following:
- The watermelon should be sweet and delicious.
- Do not mash the watermelon in a mixer. After it is cleaned of its seeds, break it into small pieces, with the same watermelon core, so that you can feel them later in the pie.
- To find with the eye and experience the balance of watermelon juice and flour in the porridge, but also the right balance with honey and cinnamon.
- The thickness of the porridge in the pan should not exceed 1.5 cm.
Watermelon pie is a special and at the same time very easy dessert of the Cyclades and it clearly proves that you can find gourmets where you do not expect it.
