Ikarian vegetable pie

Vegetable pie ή herb pie they say to Ikaria the pies made from Ikarian weeds, those who collect them by making excursions on the endless slopes of the mountains of Ikaria. And what are they? Αυτά But what exists in all the islands of the Aegean, for a while, but here, due to climate, one can find them in huge quantities and for a much longer period of time.

Sekula, caucalithres, fennel, johii, poppies, i miss, myronia, wild leopard are the most characteristic.

The pies are baked in the oven, while in the pan the pies are made with the same ingredients. Depending on the tastes, housewives add oregano, mint or other herbs, spring onion, spinach and of course dill, olive oil, salt and pepper.

The quantities and proportions are to everyone's preference or, better, proportions of the crop that results from the walk!

They usually add a little rice or a little trachana to collect the liquids, as well as chopped sweet zucchini. When the zucchini dominates then we talk about Ikarian pumpkin pie, or as they call it locally tambourine pie (drum is the sweet zucchini).

 

Recipe for Ikaria vegetable pie

Wash the greens well, finely chop the drum. In a saucepan add the greens, zucchini, a little oil, salt, pepper, while the secret of the taste of the pie is in the filling to have as many weeds as possible.

The Ikarian vegetable pie we ate at Holy Monastery of Osia Theoktistis in Ikaria by a local housewife who runs the canteen, the Maria Francescu, had trachana and some cheese. It was from wonderful to divine!
