Bubble

Nowadays the concept bubble has been identified with the void, with the lack of content, with what is about to burst and show its nakedness, seducing those who were tempted by its temporary impression.

In Greek gastronomy on the contrary, the bubble is an iodine bomb hidden in a small rock-shaped enclosure, with content that can hardly be strongly preserved in our memory.

Shellfish which is difficult to catch by divers because it is well hidden in rocks, camouflaged by the surrounding flora, is found everywhere in the Greek seas, but is caught mainly in Kalymnos where they do them and spinial.

 

 

The bubbles although not uncommon, we do not meet them many times because on the one hand it needs special art and an experienced eye to distinguish them at the bottom, on the other hand because the sharp, iodine taste, which differentiates them from all their sea relatives, has few and daring friends if not many enemies!

The bubbles they are soft as a hard sponge and inside they create a bubble in which their flesh is surrounded by a membrane. We open them with a transverse knife and discover their wonderful yellow-orange inner world.

They are eaten raw with lemon, ideal company for tsipouro or ouzo!
