Kalymnos Sea Food

Η Kalymnos Sea Food is a fresh effort that started in 2012 a few years ago on the island of sponges Kalymnos from the Social Cooperative Enterprise of Women of Kalymnos "Panagia Ypapanti". In Fish ladder of Kalymnos the effort was housed and the facilities for the processing of the pastes were made.

The cooperative was created in 2012, as it was formed by women and daughters of the fishermen of the island, while the inspirer and leader of the effort was Mr. George Katsotourchis, president of the fishermen of Kalymnos and president of the Federation of Fishing Associations of the South Aegean region.

Mr. George set as a goal the utilization of fresh fish that does not manage to reach the market, creating fine processing products, thus contributing to the income of local fishermen. He traveled to the Basque Country, got to know things and things up close and started his venture in Kalymnos five years ago.

 

 

The first step was the training given by the Italians, experts in processing and catching fish.

Five years later, after a series of experiments the Kalymnos Sea Food, as is the commercial title of the Cooperative, has come up with a large number of codes, and concerns products salted from different catches. Two products stole our hearts, the Octopus ink paste (!) and bubble spin, this rare dish, placed by Kalymnos Sea Food in a jar of 200 gr. and so people can find it in the market.

Another very special meze is Alalunga smoked tuna fillet in oil. The tuna is fished with longline by the fishing boats of Kalymnos and is delivered to the packaging plant on the same day. It is picked up by the women fishermen, washed, the skin is removed, filleted, pickled, smoked with aroma of (thyme, thyme, oregano, products from the mountains of Kalymnos) and then packed in glass jars sealed with the vacuum method for the maximum assurance of maintaining the superior quality of the product.

That's it salted-smoked swordfish fillet it is also a delicious meze. Kalymnos produces 70% of the nationwide production of swordfish, having a fleet of 720 fishing boats and the production is delivered to Kalymnos. Its processing technique is done as above with the production of tuna.

In addition to the protagonists of Kalymnos Sea Food, we tried other flavors, such as salted sardine fillet, smoked sardine with aromas (crumbs, oregano), smoked mackerel with aromas, salted fillet gopa, salted smoked bonito, smoked white, white octopus vinegar in a jar.
