Octopus meatballs of Kalymnos
Η Kalymnos with the largest fleet of fishing boats in the Aegean that exceeds 350 boats, has to be proud of its many and exquisite seafood delicacies. Two of them are made from octopus, the octopus meatballs and lol.
Octopus meatballs are probably the most emblematic ouzo of Kalymnos.
The octopus is cut with two minced meat knives (nowadays) - nowadays it is usually put in the blender - and then mixed with the onions, bread crumbs, garlic, cloves, salt, pepper and flour for light breading.
The octopus meatballs require the company of tsipouro or ouzo.
