The restaurant Siparos in Paros It 's in the Swords, 3 km east of Naoussa, on the coastal road to Santa Maria and Langeri, shortly after passing the homonymous narrow beach with golden sand and shallow water, and just before reaching the sand strip that connects the area with the islet of Oikonomos.

There on the road and 10 meters from the beach, and through a rural and quiet landscape, stands a small white traditional house with a garden protected by large tamarisk trees. Is a little paradise with plenty of sea views -quiet even with the meltemia-, and majestic sunsets.

Privileged position, especially in summer, when the island sinks, private parking, tables spaciously placed at ideal distances, minimal aesthetics based on the Aegean white, a service of the best of the island, and a very interesting kitchen, which moves comfortably between refined traditional, creative Greek cuisine, Mediterranean and finally ethnic - especially raw fish.

From menu We distinguished it from the traditional ones, the eggplant salad, the Parian chickpea, the kaltsouni, the fresh squid with black tarama.

From Greek creative cuisine, the beetroot salad (beets, strawberries, black garlic, xinomyzithra and pistachio of Aegina), the "pastitsio" (shrimp ragout, béchamel, etc.), linguine peskandritsa (celery, lemon zest, garlic and basil), garlic and basil lime zest), lamb (simmered with aromatics).

From the ethnic cuisines fish carpaccio (sea urchin, seaweed, olive oil and lime), tuna tartare (avocado, caper, lime) and tuna tataki stand out.

Siparos high artillery includes the first fish (ribs, grouper, etc.) that are baked whole in the oven covered with coarse salt and presented "Flaming" from the suma thrown over them before opening the fish and serving, as well as cacao, lobster and lobster spaghetti.

An interesting dish of the day, the well-known beautiful lionfish (looks like a scorpion, but has much more impressive thorns), the "wanted" killer fish that appeared in the Greek seas in 2015 in Rhodes and threatens the biodiversity of the sea, as it exterminates marine fauna. But as with the "German", another host fish, which was eventually integrated into our kitchen, so the movement was created against the lionfish "eat before you eat", where Siparos participates by serving lionfish in bites, grilled and boiled.

A peaceful afternoon with my friend the winemaker George Moraitis, we sat and tasted the food of Siparos, and Paris Karamitsos he told us his story:

«Originally from my mother, the genus Roussos, Parianos, I was born and raised in Piraeus in 1979. In my childhood I spent my summers in Naoussa, while during my studies (University of Piraeus) I worked in service in Silver Papadaki - Barbarigou, when he was still in Naoussa, at Christos restaurant (the first gourmet restaurant of Naoussa since the late 1970s) and in Piraeus, in the unique Jimmy's Fish of Tzimis Grigoratos in Pasalimani. Great schools all three of them. In 2005 Christos Krimaias invited me to take over the service of his restaurant and I stayed until 2009 until it closed. Then I receive this shop that functioned as a tavern with meat from Damianos.

In the beginning I had a partner from 2013 I'm alone with my sister. From 2015 I formed my current identity.

In the kitchen I have since consistently had two young chefs, him Christos Stella from Paros, and him Giannis Bissas. We work every day from Easter to October, from 1.30 until midnight. We got the name of the store from the homonymous cloth, from the Latin, which at the same time suggests the view of Paros.

Our customers are from the holiday homes of the area, from Naoussa, since we have such easy parking, but also from the sea, since the beautiful wooden pier allows the inflatables and dinghies to bring people from the large boats».

It is a great consolation that in Paros there is a large dispersion of good restaurants in many areas and the main thing is that the shops belong to locals who love and respect their place.
