Halkidiki fried bread

Fried bread is a humble dish that marries three classic ingredients - flour, feta and oil - and is common in many parts of Greece but with different names. In Skyros it is said oil pie, in Evia fried bread, elsewhere cheese pie etc.

Sometimes it is eaten plain, when its main taste is salty, and other times it is sweet because it is accompanied by local honey.

Here we will meet a recipe fried bread from Halkidiki with sour cream.

Ingredients:

• Half a kilo of hard wheat flour
• 1 sachet of dry yeast
• A little salt
• A little olive oil (and a little more for frying)
• Slice grated on a coarse grater
• Warm water

Execution:

Mix the flour with the yeast and open a puddle in the center. Add a little salt and slowly start adding lukewarm water.

Knead for a while and then cover the bowl with a grease gun and put a towel on top.

Leave it for 1 hour in a warm place to swell and double its volume.

Once it is puffed, knead again 2-3 times and take pieces of dough the size of an orange and open a sheet.

Spread the sheet with the rolling pin, giving it a round shape. Pour a little oil and grated feta cheese on top. We make the second sheet that we place on top a little smaller, so that with the excess of the bottom it folds and closes the top after we press it peripherally with our fingers.

We put a little olive oil in our pan, and after it burns well, we put our round pie and after a while we turn it over.

Serve with sour cream.
