The "Kazan DipiIs a sweet that is loved and used in Thessaloniki, Greece. The story of this unique political cream, her Balkan crème brûlée, does not have the prestige and prestige of the corresponding French. It is said that it was made by mistake.

According to the legend, its history is lost in the depths of the centuries, when the Sultan asked his confectioner to make him a cake. Unfortunately for him, he burned the buffalo milk and in order to justify himself to the Sultan, he called it "Kazan Dipi", that is the bottom of the cauldron. The argument was convincing, but even more convincing wonderful taste of the cream.

 

 

Recipe for Kazan Dipi

We watched the preparation of Kazan Dipi at its facilities Beka family farm in Sindos, Thessaloniki.

The basis of the cream is fresh buffalo milk, otherwise mix cow's milk with sour cream.

In a saucepan put milk, sour cream, sugar, mastic or rose water or vanilla and the mixture with boiled milk, rice flour and fat. In handicrafts these were made in special basins.

Melt the sugar in a pan with butter so that it caramelizes, and pour some of the cream on it to grab it. Then pour into the pan, the dose of cream you want.

Allow the mixture to cool for 2-3 hours.

It is then cut into wide strips and offered with the burnt side facing up. Optionally sprinkled with chopped pistachio.
