If there is a "gold" company in Lemnos, a company that produces local agri-food products, which is the ambassador of the island in Greece - and timidly abroad - this is definitely the Chrysafi Company. Michalis and Makis Chrysafis first cousins, both children of farmers, as soon as they finished their studies in Athens decided to return and be active on their island. They started their business in 1984 making one bakery utilizing the wheat of their parents.

In 1991 it becomes today cheese factory in Karpasi, a modern unit of high standards that it produces today Feta of Lemnos (PDO product), Basket of Lemnos (PDO product), Melichloro and Cascavali.

Today, the company Chrysafi with the emblem of the sea lily - a characteristic and rare element of the flora of Lemnos - revives traditional recipes utilizing the unique raw materials of the land of Lemnos (goat's and sheep's milk, the flour from the "mavragani" variety and the locals ) using high technology. At all stages of production, of all its products (dairy, pastries) the company Chrysafi implements a certified food safety management system EN ISO 22000: 2005, while since 2009 it works closely with the "Department of Food Science and Nutrition" University of the Aegean in research and development. This collaboration is multidimensional and includes the implementation of approved research programs in order to create new innovative traditional products.

Η Chrysafi Company in its modern form is now active in the production of excellent cheese products which it exports to several foreign countries. At the same time, it maintains a remarkable chain of stores in Lemnos. Through them it has all the products, which are made mainly from local raw materials (local wheat variety mavragani, local milk) through the institution of contract farming (pre-purchase of raw materials) thus contributing to maintaining employment in agriculture and animal husbandry, work in dozens of families.

Apart from cheese products and bakery products (breads, rusks, rusks, cookies) the Chrysafi family produces a large range of quality pasta, confectionery and snacks (pies, etc.) with the result that the Chrysafi family's reputation has crossed the border has aroused the interest of many media outlets that have made extensive publications.
