Caspakino - lamb with rice and cheese

When in the rest of Greece we say "lamb in the oven", we usually mean lamb with potatoes and a little garlic, either lemonade, oregano, or with rosemary. In Lemnos when they say lamb they mean "Caspian», As they do in village of Kaspakas, ie with herbs, spring onions, fennel, tomato, raisins, rice and of course with Lemnos basket cheese.

Recipe for Kaspakino

Take the milk lamb, wash it, season it with salt and pepper, chop it and put it in a pan with a little butter and a little water.

Bake it in the oven on both sides and if necessary during baking add a little hot water.

After it is cooked, take the lamb out of the pan, take the broth and then two cups of rice (or as much as everyone wants), put it in the pan and add cups of boiling water, fennel, mint, spring onion and raisins.

After the rice is prepared, spread the meat on top and the cheese on top, after we have cut it into slices, salt, pepper and leave it in the oven until the basket is reddish.

The lamb was cooked for us by Mr. Rena Laskaridou, after the previous day he showed us a cheese-making demonstration of the "basket" cheese, which covered the cashew lamb cut into slices. We thank her from the bottom of my heart.
