For this reason he founded the company "AEGINA® - Nuts", where as object of activity is the production, processing (cleaning, sorting), baking and standardization of this unique product Aegina.

The company's facilities (new machines imported from abroad), are created on privately owned land, close to the estates, so that there is a direct connection between production and processing and standardization. The company was the first in Greece licensed to operate, process and package for "PistachiosAnd the almond.

At the same time, due to the good relations and the trust he had with the other local growers, he starts to buy and process their production, resulting in a very large part of the produced quantity. "Pistachio of Aegina" to pass every year from his hands.

In 1989, the son of Giannis Tzitzis, Nikos, quits his job on the ships, takes over the company and proceeds to its complete modernization, with new machines, a modern way of organizing production and systematic control of processing. Because of his knowledge and experience, relationships with all of them producers of Aegina they become even more narrow and systematic: there is a constant exchange of information, scientific analysis and transfer of know-how (introduces organic fertilizers for the first time). Cultivation is now based on knowledge and technical training, not just experience, and excellent quality and the unique product continue to be the guides of his efforts.

The culmination of all this and the quality of the nut "Pistachio of Aegina PDO" - Nikos Tzitzis, was its registration as a Product of Designation of Origin by the Hellenic Organization for the Certification of Agricultural Products - AGROCERT.

Today, in addition to the significant range of pistachios that it distributes in beautiful packages, the company is considered very reliable in collaborations, which is why several pistachio standardizers of the island trust the production of their products.
