Kolitsians of Volos

The tsipouradika of Volos are the most famous in Greece. And it is popular not only for their seafood delicacies, but also for their serving ritual (each new serving and different meze). The kolitsians (sea anemones) is one mezes trademark of Volos and the harder they are to pick in the sea, the juicier and tastier they are when fried with batter and accompanied by sea bream.

The sea anemones (Kollisians, Kolitsians, Gallips, Kolitzians, agalips) are a colorful sea plant living stuck on rocks in shallow water and swaying its tentacles lazily to gather its food consisting of small fish and octopuses.

In Volos, from the still difficult years of refugee and poverty in the 20's, the inhabitants cooked and ate all the fruits of the sea that could be eaten.

Sea anemones exist all year round.

After peeling them off the rocks with a knife, they place them in a pan and rinse them with fresh water to remove the sand and the minimal poison they have. They are then placed in a colander to drain their water, floured and fried.
