Mushroom pie

ZISIS hotel is located in Excellent, one of the graphics Zagorochoria. It is built in the local traditional architectural style, with a dominant element of stone. It is a family business and is the first hotel unit to operate in the village.

In the hotel restaurant we will find a variety of local specialties, among them several of the famous Zagorian pies. Their creator h Georgia Zisi, wife of the hotel owner Alcibiades Zisi, his brother Costa Zisi of the excellent photographer, who immortalized - as much as anyone else - the nature of Zagorochoria.

Most of the ingredients of the dishes are locally produced or come from the neighboring hotel vegetable garden. Georgia Zisi presented us the preparation of the local mushroom pie.

MATERIALS

  • 1 kg of basil mushrooms / porcini
  • 4 large onions
  • 4 eggs
  • 7 rustic handmade sheets (all three we have made before baking)
  • Olive oil
  • Goat or sheep butter
  • Salt and pepper
  • A large baking tray
  • Preheat oven to 200 ° Celsius

EXECUTION

A. The agitation (filling)

Fry the onions in oil to which we have added a little butter and just before removing them from the heat add salt and pepper, along with the chopped (not chopped) mushrooms, for a minute or two.

Allow the mixture in a bowl to cool and then add four beaten eggs and mix.

B. In the pan

Bake the 3 leaves well in the oven. Then we spread our ingredients in the oiled pan in the following order:

  • 2 raw leaves
  • 1 baked sheet
  • First layer of 1/3 of the agitation
  • 1 baked sheet
  • Second layer of 1/3 of the agitation
  • 1 baked sheet
  • Third layer of the remaining 1/3 of the agitation
  • 2 raw leaves which we sprinkle lightly with oil one by one as we add them. Finally, turn the pan and the stalks (the extensions) from the leaves and sprinkle them with a little oil. Bake for half an hour at 200 degrees Celsius.
