Shampoo in batter

The elderberry or elderberry (boxwood, foam wood) is a small deciduous natural tree and is found in wet woodland and is known since antiquity (Dioscyrides) for its healing properties.

The inflorescences of its fresh flowers kufoxilias (sampoukou) dipped in batter, fried in olive oil, is a delicious snack, but also a traditional one dessert, served with sugar, honey or syrup as donuts are made.

The flowers of the elderberry are used to make liqueurs, and to flavor other alcoholic beverages but also as a decoction. Recipes for syrups, wines and liqueurs have never lost their popularity and their use continues to this day.

Folk tradition wants the samboukos to be one complete pharmacy due to its innumerable therapeutic and prophylactic properties. The parts used for healing purposes are the bark, the flowers, the fruits and the leaves. Its flowers are fragrant, white in color and come out in inflorescences like the fruits, they have a pleasant smell due to the rich essential oil they contain. Its small fruits are dark, almost black when ripe.
