Eggplants with trachana

The eggplants of summer are cooked in many ways. One of the most nutritious, delicious and rare cooking is with the sweet trachana! I tried it for the first time in Kranidi and I was impressed. It was a poem!

 

Recipe for aubergines with trachana

Materials:

  • 4 tsakonian aubergines
  • 1 large onion
  • 1 glass of wine oil
  • 1 pounds of water
  • a chopped tomato
  • 1 tablespoon belte
  • 1 cup trachana sweet
  • salt and pepper

Execution:

Put the oil on the fire to burn and add the whole eggplants, engraved after leaving them in the water for half an hour to separate.

Once they get colored, add the onions to deep fry, add the remaining ingredients, the pulp, the chopped tomato and the trachana. Stir somewhere so that our food does not stick and cook for 45 minutes on low heat.

The recipe was given to us by Folklore Workshop of the Municipality of Ermionida. This rare dish "aubergines with trachana" is also common in Crete and is made with sour instead of trachana.
