Braised octopus in the pan

One of the most popular fasting recipes of the regions of Greece that have contact with the sea, is the cooked χταπόδι.

The main ingredients besides octopus are the onion, the wine, the oil and the tomato paste. Depending on the amount of ingredients and the type of cooking, each area names it in its own way. Octopus stew, octopus wine, octopus braised, octopus cooked.

In Skull, the Folklore Workshop of the Municipality of Ermionida he cooked us one braised octopus in the pan.

 

Recipe for braised octopus in the pan

Materials:

  • An octopus (about 1 kg) cut into medium pieces
  • 1 kg dried onions, coarsely chopped
  • 1 glass of Kranidi olive oil wine
  • 1 glass of mavrodafni wine
  • 4 tablespoons belte
  • 1 teaspoon salt
  • a little pepper
  • minimal cinnamon
  • 5 pimples cinnamon pepper
  • 4 bay leaves
  • 1 teaspoon sugar

Execution:

Put the olive oil, the octopus, the onions in a deep and large pan and sauté them until the octopus takes out its liquids. Add the sugar and stir until the onions are caramelized. Add the salt and the other spices and extinguish with the mavrodafni.

Once it has evaporated, add the belt, a little water and let it boil on a medium heat for half an hour. If we see that it is necessary, we add a little more water.

The octopus was accompanied by Kranidi wine!

And it was a bite and a home!
