Pastries and pasta of Ermionida

The doughs and pasta is the kitchen of the wealth of poverty. With the humblest ingredients, water, flour and salt, the housewives made delicacies to fill the family. There are several versions, depending on the time, the way of cooking but also the help of more "luxurious" ingredients such as oil, butter, mizithra, honey, cinnamon, anise.

The most typical pastas and pasta Hermione are the Goges, the Drums, the Petuas and the Ghanakia!

 

Gogs

Ingredients : 1 kg flour, a little salt, XNUMX kg lukewarm water, a little oil, milk butter, fresh Kranidi mizithra grated

Implementation : Add a little oil to the flour and rub it with your hands.

Add water, salt and make a soft dough. We shape rods the thickness of a finger and cut them to the length of a match. We press the pieces on a grater to get a shape.

Boil them in plenty of boiling water for about half an hour and strain them.

Serve after pouring hot homemade butter and local mizithra!

 

Drums or Striftades

Ingredients : A handful of wheat flour, a little water, a little salt and a little oil.

Implementation : Mix the flour with the salt and by wetting our hands we rub it to make the twists. When they are ready, pour them into boiling water and leave it until it becomes a thick soup. Serve in a deep dish, pouring Kranidi oil and local mizithra.

 

Flies

Ingredients : flour, water, anise, cinnamon, honey, oil

Implementation : Boil the water with the anise and 1 cinnamon stick.

Strain and add the flour to the flavored water until you make a medium to thick porridge.

Heat a non-stick pan (pan), pour a little oil and add a small amount of porridge. We shake it from right to left so that the porridge goes everywhere and as soon as it is baked on one side, we turn it on the other, making golden-blonde pies.

Continue until the porridge is finished.

Sprinkle with honey and cinnamon and serve the pies hot and delicious!

 

Rags or Ghanaians

Ingredients : 1/2 kg wheat flour, a little water, the juice and zest of a lemon, 1 teaspoon baking soda, cinnamon, honey or sugar, a little salt and oil for frying

Implementation : Mix the flour with the corresponding water until it becomes a thick porridge. Add the lemon juice with the soda after mixing them together, a little salt, the lemon zest and with a large spoon pour the mixture in hot oil and fry on each side until the rakes get a bright blonde color.

Serve on a plate sprinkling with local honey or sugar and plenty of cinnamon !!
