Bustoulas

Bustoulas is a rare traditional pie that has been found in two parts of Greece, in Andros and Monemvasia, places that have been inhabited by Arvanites, since the word is also Arvanite.

At Andros they make it like an easy recipe for stuffed bread stuffed with lard, orange zest, raisins and cheese while often adding louza, or pieces of sausages.

At Monemvasia brustoulas is an impressively large pie, where on the sheet that is spread in an open pan, we pour a mixture that has been slightly cooked in the pan and includes fried onions, sweet trachana, wheat (oatmeal), siglino, orange zest, raisins, throum. When the pie comes out of the oven, it is poured with honey.

In all cases, however, the denominator remains the same. Brustula is a festive recipe, which is usually made for the festive table of Christmas or New Year.

 

Recipe to make bruschetta

Ingredients

  • 1 onion
  • Trachana
  • Wheat
  • Water
  • Λάδι
  • Savory
  • Cumin
  • Salt
  • Flour
  • Honey for serving

Implementation

Grate an onion and fry it in oil over high heat. Then add the trachana and the wheat. Leave them for 2 minutes and then add the water. Lower the heat and bring to the boil.

Once it boils, add the cloves, cumin and salt and leave it to cool.

Until it cools, open the sheet with the rolling pin and place it in an open pan. Pour all the trachana and spread. Turn the sheet over and cover it roughly. Carve with a knife and bake until golden brown.

When the brust is ready, pour in the honey and enjoy!
