The macaroons are the sweets of the islands, because only the almond trees can withstand the drought and it is not accidental that the macaroons of Hydra, Spetses, Poros, but also of Tinos and Mykonos etc. are famous. Monemvasia the tradition of the macaroon made for households, for celebrations and weddings, was received in the early 1950s by the Evangelia Charami and her husband Evangelos who produced for the first time in a workshop sweets which were offered as a dessert in their traditional coffee and pastry shop, in the central square of Monemvasia.

70 years have passed since then, and their macaroons and other sweets have become the sweet ambassadors of the place.

In the workshops Moreos Idista The following favorite pastries are prepared every day by the Charami family, based on traditional recipes:

  • Macaroons, made from chopped almonds, sugar, egg white, butter and flower water
  • Shelves (same dough as the macaroon but wrapped in a very thin sheet and with a light vanilla aroma),
  • Melitinia referring to the cheese pies of Santorini, the laconic version of scaltsouni where the dough surrounds the cream cheese drizzled with honey and cinnamon),
  • Double made from dough fried in olive oil, then ground and sprinkled with almonds.
  • Samousades a mansion dessert inspired by the tradition of Monemvasia, having roots from the Byzantine period and consists of a rustic leaf that is kneaded and opened by hand, and stuffed with layers of walnuts, chopped almonds and sesame seeds, while spices and spices give a special flavor. nutmeg.
  • Flutes a dessert that has taken its name from its shape. The materials used are similar to those of samosa, but their taste and texture differ because the leaf of the flute is thinner and no sesame and nutmeg are used. It is a light dessert and is easy to eat.

Talking to the master Panagiotis, the second generation of the Charami family, we learned the following:

«My parents Evangelos and Evangelia Charami from 1958 in their patisserie in the central square of Monemvasia, offer macaroons as desserts and established them as traditional Monemvasian dessert.

The 1978 I take over with my wife Calliope, when we made the first investments in technological equipment, as we expanded the range of our products. Our children studied economics, Vangelis and Evangelia food technology, and in 2002 when after some hesitation they decided to do our job, we turned the hostel we had above the patisserie into a workshop and thus created 500 sq.m. .

Today we employ 20 people, in the workshop, in the confectionery and in the branch we have in Sparta. Our slogan is "The difference is in the taste and the pure materials", and for the sake of truth our products are certified with European hygiene certificates (HACCP AND ISO22000) at a time when very few traditional pastry and confectionery laboratories in Greece have.»
