In the city center Naoussa, two steps from the town hall is the “Soura… Soup and Coffee" the only patsatzidiko in the city. The oldest eatery of Naoussa. And as one visitor said:

A 130 years old tradition as narrated to us by George Biliouris, certified Electrical Engineer of AUTh, who continues the tradition of the family until today:

«It was in the 1890s that Tassos Lalas returned from Istanbul, where he had taken refuge because he had killed a Turk in Naoussa, and settled here again in the city, opening the first winery that prepared the traditional Constantinople tripe. Around 1915, Mr. Tassos transmitted the art to his nephew, him Biliouri fees, a rare and passionate man. Lucky were those who knew him. And then came his children Vangelis and Spyros in 1950 and kept in a shop for 50 years the art of tripe. The "Soura… Soup and Coffee", The modern evolution of the historic Patsatzidiko "Fee" of Naoussa, has on the menu other soups, chicken soups, boiled beef soup, but also other appetizers that you do not find easily elsewhere, such as minds, carelessness and cheeks of beef (divine taste).

Other surprises of the shop are the baked bread on the wood stove, the carafes in bulk of excellent sour black wine of Naoussa and the chestnuts with the nuts roasted on the embers. What more could one want?

The financial crisis may have sent thousands of workers from the city's factories into unemployment, who took power before the shift in the kitchen of Telis with hot tripe or ate meatballs after the end and drank their wine, but George takes care to maintain high standards of quality and service to the friends of a unique and delicious meal, whether they are old peasants, or new workers, or night workers, or some overnighters! Every Tuesday night the shop works at night with musicians who create the relevant party.

Ο George, the 'scientist' with his wife Form, their children and grandfather Spiro, consistently rely on the tradition of taste, but also the culture of the life of the tripe.
