Stones Honey

The "donut shop" Stones Honey is one of the most characteristic gastronomic hangouts of Corfu. Since the beginning of the 2010s it has been sweetening locals and visitors of the island and has made the Town Hall Square dripping honey. In the picturesque canton (alley) with the walk (arches) Corfiot breakfast is served, traditional with local honey, stuffed but also savory in various combinations donuts.

The owner Spyros Paipetis, a young man set up a concept store that could be a management model of our gastronomic tradition. Growing up in Corfu with performances and personal memories but also from his grandfather - in whom the old shop has housed his hangout - he knows well the stories of the taste of the city:

"In Corfu there is a custom to make donuts, which come from a Venetian cake, which the locals used to call pancakes. This custom was observed from the feast of Agios Dimitrios until December 11, the eve of the feast of Agios Spyridon, the patron saint of the island. All these days the cantonments were flooded with the delicious aroma of fresh donuts (pancakes of the Saint)!

So in his honor, the housewives made donuts on the stove and on the gas stoves and the street vendors, on the fogers and the foufoudes. Tradition wants the people of Corfu, on the eve of the Saint, to do the evening prayer, that is, all night, in His church. So, in order to deal with the fatigue, the drowsiness and the suffering of the vigilant, they eat donuts in the light and in the flame from the lit lighters. This custom has been preserved to this day ", tells us Spyros who did not stand only in tradition. He traveled all over Greece to see and learn everything about it from the donut.

Finally, using the basic structure of the donut, he decided in addition to the classic recipe that he wants it with honey and almond or pistachio, he gave it to his customers to make the donut of their choice. So it suggests a great combination of combinations where:

They are also of great interest savory versions of the donut with dips of olives, herbs, dill etc. and a combination of cheeses, tomatoes, cold cuts (starring the Corfiot noumboulo) etc.
